Why I hate AI As A Cake Designer

I’m back to work today after the Holidays!

Even though I promised myself I’d be gentle, the pressure of the New Year won’t let me sit still.

My Facebook feed is flooded with AI Christmas images (the ones with pink glitter and candy canes), and I have to be honest. I hate AI.

If you’ve been in my world for a while, you know I’m usually very positive and that I hate only two things: cilantro and hourly wages.
So now it’s three things: cilantro, hourly wages, and AI.

Don’t get me wrong, I’m not against all technological advances or using them to automate certain tasks.

But I would never use AI for research or generating images.

Here’s why.

You can never tell if the person behind those images actually understands cake decorating.
Or if they just found a very good prompt.

Those are completely different skills.

Here’s what worries me.

AI sketches look impressive.
But they don’t show expertise.

And they don’t build trust the way people think they do.

Couples don’t book cakes because the sketch is “perfect.”
They book because they trust the baker.

I once had a bride who wasn’t sure if I could translate her wedding dress into a cake.
She needed a very specific shade of blue.
A certain texture.
Everything had to be 100% edible.
And the design had to feel tasteful and luxurious.

When we sat down for the cake tasting, I quietly sketched the design.
I calculated the proportions.
I showed her the texture.
I explained how the color would be implemented.

That sketch wasn’t perfect.
But it did exactly what it needed to do.

It made her trust me.
That’s what sketches are for.

I think a lot of bakers are hoping AI will fix their confidence.
They think, “If I present a perfect sketch, couples will book me.”

That’s not how it works.

What actually builds trust is this:
Being able to sketch five versions of the same cake.
Adjust proportions on the spot.
Explain why something works or doesn’t.

You cannot replace confidence with AI.
You can only build it through repetition.

And sketching by hand is still the fastest way I know to do that.

You can learn this skill in less than an hour.
