Fondant texture: Rough Stone

When I first started making wedding cakes and large show-stopping designs, I struggled with covering cakes in fondant.

I’ve tried working with buttercream, however, I love creating tall designs and have a “protective” layer that fondant gives to a cake, if it is going to be displayed.

Tip: If your clients do not like fondant, tell them that this is like a banana peel for a cake. You won’t eat the peel, but I guess you won’t eat your banana if it has been sitting on a table peeled for a few hours.

And, I decided to practice and find easier ways to cover cakes in fondant without sweating too much on creating a smooth “perfect” exterior.

My favorite fondant texture is Rough Stone with lots of variations and color combinations.

In this video, I’ll show you how to design a wedding cake, what sizes to choose and how to make a rough stone texture and apply that to a cake.

YOU WILL NEED: 
Fondant: Satin Ice 
Colors: Ivory gel, Dusty Pink Gel 
Decor: Sanding Sugar and CK Edible Flakes 
Tools: Rolling pin with 1/8 spacer (I have this one)

WHAT IS WAFER PAPER?

Wafer paper is an edible paper for cake decorating, typically starch-based. It is vegan, gluten-free, and free from most allergens. It closely resembles printer paper in texture, but it is edible and could be manipulated into beautiful florals and used for contemporary cake designs. Wafer Paper is also called Rice paper and the difference is the main ingredient.  

Ingredients: potato starch (or rice starch), water, and vegetable oil.

It’s safe to eat and the flavor is very subtle — so it won’t interfere with what’s going on in your cake. You can condition wafer paper in all kinds of ways – create flowers and textures, so it’s so great for cake decorating.

STORAGE

Keep wafer paper in a clean Ziplock bag and store in a cool, dry place. Wafer paper can last quite some time (around 2 or 3 years on average) if stored correctly.

My advice is always – just start TODAY. Take your wafer paper, and a pair of sharp scissors and watch any of my Youtube tutorials – it’s free.
