When I first started making wedding cakes, I overthought the flavor menu.
I knew I needed a professional menu, but I did not have the time or space to test endless recipes.
And I definitely did not want to spend money on dozens of recipes just to feel ready.
For a long time, I believed I needed to offer every flavor possible to book more clients.
I was wrong.
Simplify your flavor menu
While working as a pastry chef in a French bakery, I learned that simplifying often creates a better experience.
The goal is not to offer more components.
The goal is to offer complete flavor combinations.
Instead of asking couples to mix and match cakes, fillings, and buttercreams, create a menu of finished flavors.
Each combination should be intentional, balanced, and ready to order exactly as written.
Show the client a finished idea
For example, one of my flavors was Carrot Orange:
A delicately spiced carrot cake without nuts or raisins, filled with organic orange marmalade and Swiss meringue buttercream.
That description feels very different from listing “carrot cake” in one column and asking the client to choose a filling from another.
You are presenting a finished flavor experience, not a box of separate parts.
Why complete flavors work
When you offer complete flavor combinations:
- Couples trust you as the expert
- Tastings feel curated instead of overwhelming
- Decisions become easier
- Your menu feels more polished
- Your pricing requires less explanation
The client is no longer responsible for building the flavor. You have already done the work for them.
How I structured my wedding cake menu
At Florea Cakes, my menu included twelve complete flavor combinations.
During a design session, couples tasted six flavors and selected two for their wedding cake.
That was it.
No endless list. No confusing mix-and-match chart. No trying to please every possible preference.
That simple structure supported the entire booking process.
